A mercenary is a character who take assignments for payment.
When the contract is completed there is no obligations left. The Bounty hunter is often not  contract bound and if this should be the case the assignment is to track this person who is wanted for any reason. This is what Bounty hunters do and not other assignments.
The assassin is a character who kill, not necassary for payment.
Assassins killing for money do not take other kinds of assignments.
Mercenary is the more allround occupation not limited to tracking people down who are wanted or assassination of someone.
The assignment may be anything from protection, finding someone, go to war, killing someone, Kidnaping, espionage etc etc.
