@remy94 and @Swarm Yes there is the insanity factor, which can be difficult to manage, but doesn't Spidey end up using that against many of his foes. A smart strategic fighter usually prevails over a crazy random one (how many opponents have Cap A and Batman beat that are stronger and crazier than them but the Bruce and Steve have a better plan). And is Carnage much physically stronger that Black Spidey? (really asking, I'm not sure, I thought they were about the same.) Initially the obvious choice seemed Carnage but I have my doubts.

It all comes down to the host of the symbiote. For example Eddie Brock's hated Peter due to their rivalry at the Daily Bugle which in turn causes the symbiote to want to do anything to destroy Spider-Man while also maintaining its self control and focusing on the primary objective of eliminating Peter. Cletus on the other hand is psychotic and deranged individual who has zero self control and the symbiote feeds off of his insanity and his adrenaline which gives him a lust for pure bloodshed and ridiculous feats of strength as we've seen Carnage slaughter many people with little to no problem and the fact he loves to create different weaponry with the symbiote.

Usually The only way Peter ever beats Carnage is by outsmarting him, because obviously it's almost impossible for Spidey to overpower such a physically stronger opponent. so in a actual head on battle between these two characters, Carnage easily wins, Mainly because he retains all the abilities of both Black suited Spider-Man and Venom, and as Swarm said he also very insane.

Well in the case of Spidey being the hero and story will usually go his way he has sometimes "outlasted" him so to speak as the writers would want him to be victorious but in a 1v1 match Spidey is just completely outmatched in terms of strength and Carnage's insanity factor also comes in to play.

Again, it took Spider-Man and Venom to beat Carnage, even with the symbiote he still wouldn't be able to defeat him, Carnage is just too unpredictable and powerful.
